Glazed Carrots

6 medium carrots, peeled and sliced
2 Tbsp sugar
2 tsp cornstarch
1/4 tsp salt
1/4 tsp ground ginger
1/2 cup orange juice
2 Tbsp butter

Cook carrots in a small amount of water until tender-crisp, about 10 minutes.

In another saucepan mix sugar, cornstarch, salt, and ginger.

Add orange juice to sugar mixture, stir until blended. Cook and stir until thickened and bubbly.

Stir in butter with orange juice glaze. Pour over sliced, cooked carrots.
Serves 4.
