Refried Beans

2 cups dry pinto beans
1 onion, chopped fine
1/4 cup oil
1 tsp salt

  1. Soak beans in 6 cups water overnight. Drain.
  2. Cover beans with water, bring to a boil, then simmer 1 hour or until tender.
  3. Drain beans and put in mixer bowl.
  4. Sauté onion in oil. 
  5. Add onions and salt to beans and mix until smooth.
