Hamburger or Hot Dog Buns

1-1/2 cups rice flour
1-1/2 cups tapioca starch
1/4 cup dry powdered milk
2 Tbsp sugar
1 Tbsp xanthan
1 Tbsp active dry yeast
1 tsp salt
1 large egg
2 Tbsp oil
1 tsp apple cider vinegar
1 1/3 cup warm water 

  1. Combine rice flour, tapioca starch, milk powder, sugar, yeast, xanthan, and salt in a heavy-duty mixer.
  2. In a separate bowl, beat egg.  Mix in oil, vinegar and water with egg. 
  3. Add wet ingredients to the dry ingredients and beat on high speed for 3 to 5 minutes.
  4. Spoon dough into oil sprayed hamburger or hot dog bun pan.
  5. Let dough raise in a warm oven (about 170 F) for 20 minutes or until doubled in size.  Remove buns from oven and preheat oven to 350 F.  
  6. Brush buns with melted butter and bake in preheated 350 F oven for 20 to 25 minutes.
