Carrot

2 cups sugar
1 cup vegetable oil
4 eggs
3 cups finely grated carrots, packed
3 cups gluten-free flour blend
1 1/2 tsp xanthan gum
2 tsp cinnamon
2 tsp soda
1 tsp salt
1 cup raisins (optional)

Beat together sugar, oil and eggs. Add carrots.

Combine dry ingredients and add to sugar
mixture with raisins, if used.

Mix with large spoon until well blended, it will seem dry at first but will become easier to mix.

Pour into greased 13x9x2-inch pan.

Bake at 350 F for
40-50 minutes or toothpick inserted in center comes out clean.
Frost with
Cream Cheese Frosting. |
