Caramel Popcorn

9 cups popped popcorn (about 1/2 cup before popping)
1/4 cup corn syrup
2/3 cup brown sugar
1/3 cup butter or margarine
1/2 tsp vanilla

  1. Measure popcorn in a large bowl, removing any unpopped kernels.
  2. In a small saucepan, combine butter, corn syrup and sugar. Bring to a boil, stirring constantly. Continue stirring and cook over medium heat 1 minute more.
  3. Remove from heat and stir in vanilla.
  4. Pour syrup over popcorn, stirring to coat popcorn evenly.
Serve or store in an airtight container.


Popcorn Balls:
After popcorn has cooled enough to touch, with buttered hands, shape popcorn mixture into 3" balls. Wrap in plastic wrap or wax paper after popcorn balls have finished cooling.  Makes 12.
