1/2 cup butter
1 1/2 cups sugar
2 large eggs
1 cup mashed ripe bananas
1 tsp vanilla
3/4 cup sour cream
2 cups gluten-free flour blend
1 tsp xanthan gum
1 tsp baking soda
1/8 tsp salt

Cream butter and sugar. Add eggs, bananas, and vanilla. Mix well.

Mix together dry ingredients. Add alternately with sour cream. Mix thoroughly.

Spread in greased and rice floured 17x11x1-inch jelly roll pan. Bake at 350 F degrees for 18-20 minutes or until mixture leaves sides of pan or tests done with a toothpick.

Cool and frost with
double batch of Sour Cream Frosting. Freezes well.
